Easy, tasty and delicious recipe for homemade horchata!
Horchata is one of my absolute favorite Spanish vegan drinks. Filled with rich goodness, this Spanish drink is made with chufas (also popularly known as tiger nuts). This drink is super delicious and just as easy to whip up too! And it’s an absolute hit among little kids – thanks to its delicious flavor. What is a simple recipe for homemade horchata?

Horchata is the umbrella term for all kinds of plant milk beverages. The names may also vary in other countries, and horchata is also known as Kunnu Aya in the West African countries. Each of these is similar in taste as well as appearance, even though the ingredients may vary. For example, horchata has a white rice base in Mexico and other parts of America. On the other hand, in Spain, it is a combination of soaked, ground, and sweetened tiger nuts.
Where does horchata come from?
The origin of the drink can be traced as far back as the 13th century. Thanks to its incredible flavor, this vegan drink has made its way to the 21st century. Even now, it is a super popular drink across the world.
The Spanish flavor of the refreshing drink is served ice-cold and is an absolute favorite, especially in summers. People often serve this cool drink with Fartons. In America, it is flavored using spices, sesame seeds, nutmegs, tiger nuts as well as ground cocoa. In Ecuador, they blend horchata with 18 other herbs. Irrespective of the place, one thing stays constant – horchata is perfect for lactose intolerant people, as it does not have any dairy component.
Courtesy of its blissful flavor, horchata also makes appearances in different sweet recipes, ice creams, and cookies. In some parts of the world, cafes have started churning out horchata-flavored frappes too!

The main ingredient in horchata, tiger nuts, is full of nutritional benefits. It is super hydrating and is a powerhouse of essential nutrients such as vitamin E, vitamin C, phosphorus, iron, potassium, magnesium, and zinc. High in insoluble fiber, chufas are perfect aids for boosting our digestion. They contain resistant starch that can feed friendly bacteria in the gut. Tiger nuts also help to regulate blood sugar levels. Rich in monounsaturated fats, chufas help lower levels of bad cholesterol in your body. It also boosts the immune system, helping us fight off different types of infection.
For those who have switched to plant-based vegan diets, this is a must-try drink. It is also well suited for people who face issues after consuming dairy. - high-speed blender
- Chufa mix or Nut-milk bag
- 1 cup chufa (or Tiger Nuts) soaked for at least 24 hours, frained and cleaned
- 4 cups water filtered
- 1 Medjool date optional- I typically don't use any.
- Blend all the ingredints.
- Filter the liquid through the nut-milk bag, and squeeze to obtain the maximum amount of liquid.
- Save in the fridge until the moment to use.Remember to mix again before using it, as it tends to stratify. It has a self alife of about five days if kept in the fridge.
