A heart-warming and nutritious meal, soup is a favorite among many. With the holiday season just around the corner, I thought I would give you one of my favorite soup recipes, called Creamy Leek Soup. Don’t let it fool you with the name; the flavor of this soup is out of this world

Benefits of creamy leek soup


Onions are one of the most healthful foods on Earth. White onions, in particular, are rich in sulfur compounds, which help us produce healthy enzymes and hormones that protect against infection and help regulate blood sugar. One of the main benefits of eating it around the holiday time is that it will help fight off any potential infection we may encounter. But the white onion isn’t the only type of onion, and it’s just the one most people may know about; other onions are included in this family are as follows:

Green onions

Green onions are rich in vitamins A, C, B6, and K. They are also a good source of potassium, manganese, and folate. Green onions are perfect for the digestive system, and they stimulate the production of stomach acids. The bacteria that grow in our digestive tracts need to be balanced for our health to be optimal. Green onions are also known to have anti-inflammatory properties that can help with arthritis pain relief.


Shallots contain high levels of vitamin C, vitamin B-6, vitamin K, potassium, and copper. An antioxidant that helps with skin health by fighting free radicals that cause cell damage. They also contain potassium, which helps lower blood pressure, and manganese, necessary for bone growth and repair. Shallots also provide dietary fiber for achieving our happy weight, and iron, which aids in the production of red blood cells to carry oxygen to all body tissues. They also have anti-inflammatory properties that can help with asthma or arthritis. And can help lower cholesterol levels in the blood and control blood pressure levels.


Leeks contain twice the amount of vitamin C as Orange also Vitamin A; they are also a good source of:

  • Potassium- helps your heartbeat stay regular and move nutrients into your cells and waste products out of cells.
  • Iron- is used to make hemoglobin which provides oxygen to your lung’s other parts of your body.
  • Calcium-Which is needed to build muscle and have strong bones.

Leeks also contain anti-inflammatory properties that can help with things like arthritis and gout. Leeks might not be the prettiest vegetable, but they offer many health benefits and make a great addition to any meal.


Garlic contains numerous health benefits due to its anti-inflammatory and antioxidant properties, which help fight oxidative stress and inflammation. When garlic is consumed with fat, it increases the body’s absorption of allicin, a compound with antioxidant properties. It also has antibacterial properties that can help prevent tooth decay, tonsillitis, and bronchitis.

Creamy Leek Soup

This hearty soup is ideal for warming up the body this Holiday Season. Perfect as a starter or to balance between family meals!

  • high-speed blender


  • 6 leeks cleaned and trimmed, about 4 cups, sliced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp quality salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes crushed
  • 4 cups vegetable stock
  • 2/3 cup almond milk or oat milk
  • 2 green onion thinly sliced
  • 1 bit extra virgin olive oil for drizzling


  • Heat a large pot over medium-low heat; when heated, add the extra virgin olive oil and the leeks, salt, pepper, and crushed pepper flakes and toss well to coat. Cook, stirring every few minutes, until the leeks are super caramelized, about 30 to 35 minutes. 
  • Turn off the heat and carefully add the entire mixture and the vegetable stock to a blender and puree until smooth. Pour the pureed soup back into the pot and heat it over low heat. Stir in the milk, taste, and adjust salt and pepper if desired. 
  • Serve the soup with a sprinkle of green onions, and a drizzle of olive oil.
