Romesco sauce is a sauce originating from Catalonia, Spain, and it’s a sauce made from red peppers, garlic, and almonds. This savory red pepper sauce is perfect for those who are looking for some heartiness in their meals. I’m sure the name of this sauce sound intimidating to make, but this sauce is relatively easy to make, and I have the perfect recipe that I would like to share with you. Ingredients

For the Romesco Sauce

  • 1 cup roasted red peppers store-bought, drained
  • 1 1/2 tbsp tomato paste
  • 3 garlic cloves
  • 1/4 cup almond butter
  • 1 tbsp Extra-virgin olive oil
  • 1/2 tbsp sherry vinegar
  • 1 tsp high-quality salt
  • 1 pinch black pepper freshly grounded

For the rest of the dish

  • 1/2 14 oz extra-firm tofu package thickly sliced
  • 1 tbsp Extra-virgin olive oil
  • 1 bunch broccoli rabe large
  • 1 pinch high-quality salt
  • 1 bunch slivered almonds to garnish

Instructions

For the Romesco Sauce

  • In a high-speed blender, blend all the ingredients until smooth. Set aside in the fridge and reserve.

For the rest of the dish

  • Dry the tofu steaks with paper towel.
  • Heat a large nonstick skillet over medium-high heat; when heated, add the oil. Add the tofu to the hot oil and press down on it very firmly with a flat-bottomed spatula or a pot lid for the first minute. Cook, turning once, until golden brown and crispy, 5 to 6 minutes per side, pressing again with the pot lid for the first minute after flipping.
  • Meanwhile, fill a large pot with 1 inch of water and put a steamer insert inside. Cover and bring the water to a simmer. Add the broccoli rabe, re-cover, and steam. It should be tender on the inside and crispy on the outside, no more than 4 minutes.
  • Serve the tofu and broccoli rabe with the romesco and sprinkled with the slivered almonds and flaky sea salt
