Sweet Potato Street Taco – Quite a tongue twister, isn’t it? This recipe is just as exciting as its name! It is one of the best street tacos recipes, and it also happens to be one of my personal favorites. It’s healthy, delicious, and vegan – what else could one ask for in a dish? The key ingredients that make this plant-based street tacos recipe so interesting are avocados and cashews sauces. So let’s understand these ingredients a little better:


Avocados have a stony appearance from the outside, but actually, they have a super creamy texture inside. These fruits offer a range of health benefits, which also explains why this fruit has gained immense popularity across the world. 

Rich in essential nutrients such as vitamin C, E, K, and B6, avocados are powerhouses of lutein, beta carotene, and omega-3 fatty acids. They are full of healthy fats, so there’s nothing like too much of an avocado! We can include avocados on toasts, salads, or tacos – just what today’s recipe is. These fats keep us full for a longer time, which means avocados are perfect for achieving our happy weight.

Avocados also contain beta-sitosterol. Consuming them regularly will also help maintain the health of our heart. The antioxidant compounds in avocados help maintain the health of our eyes too. The lutein and zeaxanthin protect them from damage caused due to exposure to ultraviolet light.

High on vitamin K, avocados are wonderful for your bones’ health and help prevent osteoporosis. The folate content in avocados is essential for a healthy pregnancy and the baby’s growth and development.


Cashews are commonly referred to as tree nuts, but they are the seeds of the cashew tree in reality. They are loaded with nutrients and a range of plant compounds, which is why we need to find ways and means to include them in our diet, like, for example, in our yogurts. The creamy texture of cashews also makes them super compatible with different recipes.

Cashews are rich in unsaturated fats, low in sugar, and rich in fiber. They are a great source of plant-based protein. They are also rich sources of copper, magnesium, and manganese, each of which is essential to maintain our bodies’ energy levels.

Rich in two classes of antioxidants ( polyphenols and carotenoids), cashews keep our body healthy by neutralizing damage-causing molecules known as free-radicals. These properties also work to maintain our cells’ health and protect them from any kind of damage.

Every nutrient in cashews is beneficial to maintain the health of different body parts. As compared to raw cashews, the roasted version is way better – the antioxidant activity is a lot higher in the latter.

Sweet Potatoes Street Tacos

  • high-speed blender


  • 2 sweet potatoes large, diced into ½-inch cubes
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp taco seasoning
  • 1 lime juiced

Chipotle sauce

  • 1/4 cup roasted unsalted cashews
  • 1 tbsp taco seasoning
  • 1/2 cup water
  • 1 lime juiced

Avocado crema

  • 1 medium avocado
  • 1 lime juiced
  • 1/2 tsp tajín

For the assembly

  • 4-6 corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup fresh arugula
  • 1 pinch Tajín
  • 14 oz (1 can) black beans drained & rinsed


  • Preheat the oven to 425 degrees F. Line one large baking sheet with parchment paper and set aside.
  • Place the diced sweet potato in a large bowl. Drizzle the olive oil over top, then season with the taco seasoning. Squeeze the lime juice over top. Toss to combine. Transfer to the prepared baking dish, arranging everything in a uniform layer.
  • Roast the veggies for 25 minutes, giving the baking sheets a good shake about halfway through.
  • Prepare the Chipotle sauce: Add all listed ingredients to a high-speed blender. Blend to combine.
  • Prepare the Avocado crema: Add all listed ingredients to a bowl. Use a fork to mash to your desired consistency. Set aside.
  • Assemble the tacos, add some arugula to the base, then smear some Avocado crema on each tortilla. Top with a scoop of sweet potatoes and black beans. Drizzle some Chipotle sauce over the top. Finish with some freshly chopped cilantro
  • Enjoy!
