- 3 tbsp corn cobs organic
- 3/4 cup cooked quinao
- 1/2 cup basil chopped
- 4 peaches pitted and sliced in supreme
- 1 avocado pitted and diced
- 1 1/2 tsp Extra-virgin olive oil
- 1 pinch Pink Himalayan Salt
- 1 1/2 tsp nutritional yeast
- Heat a grill pan over medium-high heat until hot. Drizzle corn with EVOO and add the corn to the grill pan. Cook for 5 minutes on each side. Set aside to cool. Once cool enough to handle, cut corn off the cob and add to a large bowl.
- Mix all the ingredients together, except for the last three, using a spatula gently fold the salad until everything is well incorporated.
- Add the last three ingredients and mix thoroughly again.
- Serve and enjoy!
