Today, I’ll be introducing you to another spring-based recipe, and this time, it’s a delicious salad! Introducing – Strawberry May Salad, a refreshing and amazing spring salad recipe. Ever since I came up with this easy spring salad recipe, I couldn’t really stop talking about it to friends and family, and now, I can’t wait to share it with you all too!

Before the recipe, let’s begin with understanding why I have chosen strawberries as the key ingredient of this easy and healthy Spring salad with May’s produce.


Strawberries are available in plenty in the month of May – and that’s the first reason why I have included these bright berries in today’s salad recipe. Secondly, strawberries have a tangy-sweet taste, which makes them the perfect ingredient in a range of recipes – including salads. Apart from this, strawberries offer a whole lot of health benefits, each of which we will be talking about today.

These heart-shaped berries are packed with nutrients beneficial for our hearts. Consuming strawberries regularly will help maintain the good cholesterol levels in the body. A powerhouse of essential vitamins and minerals such as manganese and potassium, strawberries help protect our bodies from a range of lifestyle ailments.

Strawberries are known for their antioxidants and have high levels of vitamin C too. One serving of strawberries contains almost half of our daily Vitamin C requirement. With two servings, there’s no second thing required to replenish the daily Vitamin C levels. This helps build the natural immunity of our bodies, keeping us in the pink of health through all seasons.


With the presence of antioxidants such as lutein, these berries counter free radicals in our bodies. This helps to minimize the risk of cancer and other ailments caused by oxidative stress in the body. These berries also protect our eyes from the harmful effects of UV rays, thanks to the presence of Vitamin C. Strawberry May Salad.

For the Kale

  • 5 kale leaves big, cut into bitte-size
  • 1/2 lime juiced
  • 1 tbsp extra-virgin olive oil
  • 1 pinch tajín or any other chile Lime mixture

For the rest of the salad

  • 2 carrots big, spiralized
  • 1 1/2 cup strawberries diced
  • 1/3 cup pine nuts toated


For the Kale

  • Mix all the ingredients in a large bowl and massage the kale leaves until impregnated with the seasoning. Leave aside.

For the rest of the May's Salad

  • Mix the rest of the ingredients with the kale leaves and top with the pine nuts.
